We did some tests on 26.1.2. When we cure a Snow Villager, its variant changes to a Plains Villager.
On 1.20.1, curing a Snow Villager keeps it as a Snow Villager.
So this is probably not a server bug. It appears to be a Minecraft version bug, and it's not something we can fix on our end.

This issue has already been fixed in Minecraft: https://bugs.mojang.com/browse/MC/issues/MC-307266.
Our server is currently running on Minecraft 26.1.2. Once we update to Minecraft 26.2, this issue will be fixed.
